HAM FRIED RICE

MAKES 4 servings PREP TIME: 10 minutes COOK TIME: 18 minutes

Early on in my adult life, I would implement a meatless dinner once a week to cut down on the cost of groceries. A version of this fried rice dish was always on my list of meatless meals. Yes, there is meat in here, but a ham steak costs far less than chicken or beef, and you’re still getting some protein. Added bonus: the flavors in this dish completely drown out the “nasty cauliflower rice taste.” Those are Cameron’s words, and let me just tell you, if I can get my husband to eat cauliflower and actually enjoy it, I know it’s good.

INGREDIENTS

1 (10-ounce) bag frozen riced cauliflower

Extra-virgin olive oil, for the pan

½ cup diced yellow onions

2 cloves garlic, minced

1 (12-ounce) bag frozen peas and carrots

1 ham steak (about 1 pound)

¼ cup gluten-free soy sauce (tamari)

1 tablespoon toasted sesame oil

2 tablespoons brown sugar substitute

1 tablespoon granulated sweetener

2 large eggs

Sliced green onions, for garnish (optional)

Sesame seeds, for garnish (optional)

DIRECTIONS

1. Microwave the riced cauliflower according to package directions (usually 4 to 6 minutes on high). Set aside.

2. Place a large skillet over high heat and drizzle with olive oil to thinly coat the bottom of the pan. Add the onions and garlic and sauté until fragrant, about 5 minutes.

3. Meanwhile, chop the ham into ¼-inch pieces. When the onions and garlic are fragrant, add the ham and continue to sauté for 3 minutes, until the ham turns golden brown.

4. Place the peas and carrots in a small strainer and rinse with room-temperature water just to take the chill off. Then add the peas and carrots to the skillet.

5. Empty the riced cauliflower into the skillet and stir until all the ingredients are mixed well.

6. Add the soy sauce, sesame oil, and sweeteners to the skillet and stir to combine. Move the cauli-rice mixture to one side of the pan, then add the eggs to the empty side. Scramble the eggs and slowly merge them into the cauli-rice mixture. Stir to make sure all the flavors are well combined.

7. Garnish each serving of fried rice with green onions and sesame seeds, if desired, and enjoy! Store leftovers in the refrigerator for up to 5 days. Reheat in a skillet with some olive oil or butter.
